the independents coffee cooperative promotes all fair-trade, organic, shade grown coffees. as mentioned joe's is one of the members of the cooperative. another is RED HOOK coffee and tea on s. 4th between catherine and fitzwater. the coffee is excellent as is the atmosphere and their sandwiches and wraps. the independents peruvian select coffee is excellent and is $13/lb at red hook.
