Default Wiki software input

I am looking to mess with setting up a wiki and I seem to be eyeballing phpWiki.

Any advice on it? Other recommendations?

The environment will be apache, mysql if needed and preferably php for the language (but anything that will work in Unix without significant hacks will be ok). Security access to editing and viewing is important.

I've set up tWiki - it is pretty robust
it uses perl cgi, so that can be something of a hassle to cpan some of dependencies

actually they seem pretty similar

Use packages. openSuSE already has a few wiki packages around.

If you want MediaWiki, the big package that Wikipedia uses, you can do a 1-click install on openSuSE to put it on your machine.

Default try Bitnami's stuff

Drupal is also very popular and fairly extensible. if you visit Bitnami, you can find fully enclosed 'stacks' including CMSs like Drupal and others. You can download an installer (Win, OSX, or Linux - depending on the stack) and with a single click have an isolated fully functional wiki (or whatever). Test them all, see what you like - don't forget to check out the optional modules each offers. Of course you really have to find a good theme to be happy.

It's probably the easiest path to wikidom though.

Personally I like the bleeding edge mediawiki from their svn. I used to use it for a bunch of school related stuff. It also has the added benefit of a low learning curve if you're working with people familiar with wikipedia.
