Unless it's a night shot I almost always use aperture priority. HDR photos are grainy or noisy by nature so raising the iso isn't a good idea. I've also tried 5 and 7 shot brackets but didn't see a big enough difference to switch from 3 shots at 2 stops apart.

I always use an ISO of 50 or 100, no matter the circumstances. I loathe that grainy high ISO look. I just shoot in manual and let the other settings compensate.
