Default Hummus...

I love the hummus but I am not a big fan of the pre-packaged stuff.

(1) Does anyone know where the best place in the NE to purchase fresh hummus?

(2) Has anyone tried to make your own hummus, and if so how did it turn out?

Hummus is incredibly easy to make well if you have a food processor, and for about 1/4 the price you get twice as much hummus. I can't really give a recipe, since I just do mine by eye, but there are plenty of recipes on the internet. I generally like mine with a little less tahini and a little more lemon juice than most recipes call for.

The secret is to soak the chickpeas overnight with baking soda (1 tbs per 1/2 lb of chickpeas, which will make a lot of hummus). The baking soda will make the beans meltingly soft when cooked, leading to a wonderfully creamy and delicious paste at the end.

Cheap, easy and tasty -- look for the kosher food aisle in your supermarket (I know Shoprite on the Blvd has this). Maneshewitz has a hummus mix. All you do is add water. I love it!!!

Hummus

1 cup cooked chick peas
1/2 cup tahini
4 garlic cloves
juice of 2 lemons
4 or so tablespoons water
salt and freshly ground black pepper
Blend in food processor 'til smooth, adding a little more water if necessary. Yum!

Are you kidding ? That place only lasted a year. Worst greasy falafel anywhere. It was green colored inside the oily brown cover.
Seems like all the Middle Eastern restaurants are using packaged hummus made off-site. Sad.
I sucks when you go out to dinner, and they spoon some factory made stuff out of a plastic tub, and charge you $$$.

Make your own. (shortcut recipe as good as any)

1 can Chick peas, drained and rinsed
1/2 cup tahina sauce
garlic powder
black pepper, or ( I use fresh ground multi-color blend)
pinch or so of cumin
seasalt
2 tbl. of olive oil or canola
A little lemon juice (1 or 2 teaspoons)
paprika

Throw everything except the paprika in a food processor, and let it go until it's a paste, adding small amounts of water as it blends to get that correct consistency. Will take a couple minutes.
Refrigerate, add a little oil on top , a little paprika, parsley, and you got the real stuff.

I think it turns out better if you reserve some of the chick pea stock and use that in place of water.

The Three Monkeys up across the street from the train station around the corner from Grant & State has a wonderful homemade hummus appetizer that is well priced and plentiful (a huge platter for around $6.50).

Shady Brook Farm up in Yardley/Newtown has locally made small batch all natural Hummus. Although it is "prepackaged", it is a local guy making it. I believe it goes by the name, "Bob's Original Hummus". My husband loves it and we pick it up pretty often.
We make an afternoon of it. They have an awesome homemade Ice Cream shop at the farm with playground equipment for the kids and a nice, very large patio for the parents and you can browse around the farm market.
