Yeah I was just at a little Carniceria in the San Joaquin Valley town of Madera Ca that is kind of like what you are describing. Like a you can pick up a can of La Morena salsa, 1/2 apound of tripe and oh we have a little taqueria on the side. Awesome al pastor pork tacos.
Yeah its not "authentic" in that way - go to South Philly or maybe someplace in agricultural South Jersey that I don't know about yet for that. Its a passably "fancy" family-run restaurant, not a divey 2 person run greasy spoon. I agree they are different animals. Sill in its class, Las Cazuelas is pretty damn "authentic" for the type of place it is. I happen to like the richer, saucier Oaxacan style too, myself, I should say. Las Cazuellas does a really good job of hitting that sweet spot between a "nice", "fancy" place and a "family" place and is pretty noteworthy just for that.
